Deadly Cheese Lovers

Challenging the ban openly would likely trigger a very harsh, very public response from Russian authorities. On Thursday, authorities in Russian-controlled Crimea seized and destroyed nearly two tonnes of food products imported from Europe and Turkey from local entrepreneurs. Moscow has made a show of its food ban ever since it came into effect in August in response to Western sanctions on Russia over the annexation of Crimea. Since that time, Russia's love-hate relationship with imported foods has repeatedly made international headlines, with authorities in certain regions publicly burning hundreds of tonnes of foreign-made food, customs guards seizing Western foods at airports, and in at least one case, regional authorities bulldozing live geese.

The message has been quite clear: T hose who dare to circumvent the food ban have been portrayed as hardcore criminals by Russian law enforcement. Last August, Russia's Interior Ministry announced that an elaborate sting operation had brought down six people engaged in the illegal cheese trade.

One savvy entrepreneur has found a legal way of sidestepping the ban - by selling to Russians from Germany. As the eggs hatch into a myriad of white transparent maggots, they feed on the cheese. By doing so, they produce enzymes that promote fermentation and cause fats within the Casu Marzu to decompose.

Sometimes, cuts are made into the rind of Pecorino Sardo and already-hatched maggots are introduced into the cheese. This speeds the whole cheese making process along.

Comfort Food

Some say Casu Marzu tastes like an extremely ripe Gorgonzola. That is, of course, without the savoury blue veins and with a whole lot of larva. One piece of Casu Marzu may be populated by thousands of living, breathing maggots. In fact, local Sardinians will tell you the spicy, creamy cheese is only okay to eat if the maggots are still moving.

Is Casu Marzu Dangerous? Casu Marzu has been declared illegal and not in compliance with EU hygienic standards. It is banned by Italian health laws and not sold in shops.

In addition to numerous anecdotal reports of allergic reaction including burning, crawling skin sensations that last for days , there is increasing concern of risk for enteric myiasis, or intestinal larval infection. In that case, the maggots may take up residency in the intestines for some time. They can cause serious lesions and bore through intestinal walls, resulting in abdominal pain, nausea, vomiting, and bloody diarrhoea. In fact, the Italian cheese is often brought out for special occasions like birthdays, bachelor parties, and weddings.

If you find yourself with strong stomach and a local Sardinian connection, Casu Marzu may be procured — for about twice the price per pound as regular Pecorino. One final note of caution, some people wear eye protection when eating Casu Marzu: An amazing feature of French cuisine is that pouring melted cheese over your food is considered a meal — and not just one you make at home when your housemates are out of town.
