The recipe, some contain a picture, have ingredients and some have a lot of discussion about the recipe itself and sometimes the process of preparing it or the ingredients. But Joey decides to knead by hand instead. They let the dough rise for awhile and work on the toppings, which today are going to be mangos and chicken, Rob's kids' favorite. Rob shows Joey how to cut a mango, which he's never done before. With Rob's help, it's not too hard, and once it's peeled and chopped, they pair it with some rotisserie chicken, which is a great kitchen shortcut.
Then they cut up three kinds of meat and fish to cook on the hot rocks - sirloin steak, ahi tuna and shrimp - cutting them into small bites so they can cook quickly on the rocks. Now that everything's ready, Rob mixes up some of his favorite dipping sauces and then they start cooking on the rocks. Joey loves the flavor and the method! But while they're cooking, Rob and Joey head back to the kitchen to get the flatbread dough. They cook the dough right on the grill, then adding the cheese so it gets melted before the crust starts to burn.
They add the toppings and let everything sit on the grill for just a moment before it's time to dig in. Even the crew grabs a bite because it looks so irresistable. Last up, they're adding a kick to a classic dessert with grilled pineapple topped with vanilla ice cream and chocolate sauce. They grill quarter inch think pineapple hexagons and then chop it up, adding it to a bowl of ice cream with a few coconut flakes, some chocolate syrup and graham crackers too.
