When I make these, I serve half of them with melted cheese - Basically I grate my favorite cheese on the cracked egg before putting them in the oven. I have used Swiss, cheddar and gruyere so far.

Another yummy variation is using maple bacon instead of regular bacon. This adds a little maple smokiness and touch of sweet. A real crowd-pleasing dish. Great post however , I was wanting to know if you could write a litte more on this subject?

This is such a delicious post, and was thinking much the same myself. Super fun and easy to make! I used wheat bread, but I would definitely try it with white next time. I was excited to find this cookbook, so when I purchased it, I immediately opened it with my Kindle app. The recipes do not tell what size muffin pan to use or how many muffins each recipe will make. It seems like that would be standard information on a recipe. Sorry, but I asked for a refund. Who would have guessed a muffin tin could be used to make so many delicious simple fast healthy vegetarian recipes.
