I quickly looked at all the recipes. Since I have 15 cans of pumpkin in my pantry, I will be able to try quite a few. Lots of helpful, yummy and easy recipes. Pumpkin muffins are a favorite in this house, but it was great to see just what else could be done with this great food! It does - trust me. But as to whether or not you'll see the Great Pumpkin rise up out of the pumpkin patch? Great Pumpkin Cake makes a 9 x 13 x 2 cake. Preheat oven to Cream butter and sugar until fluffy. Add eggs, beating well after each addition.
Sift flour with dry ingredients. Combine pumpkin and milk. Add sifted ingredients alternately with pumpkin mixture to butter and sugar. Pour into a greased 13 x 9 x 2-inch baking pan. Bake about 30 minutes or until toothpick inserted into cake comes out clean. Top with whipped cream to which sugar and vanilla have been added, or with vanilla ice cream.
