I think that next time I will use either corn tortillas or corn chips with it, as the flour tortillas just don't want to cut very well, and are sort of a mess in the bottom of the dish. Why would you even try to give it stars if you never tried it? You are supposed to rate a recipe after you tried it! Family liked this dish. Took the advice and cut the tortillas to bite size. Used multicolor precut peppers and worked great. Husband scooped with chips. Added sour cream after done. Medium salsa was just the right amount of heat.
I find most recipes I try from sites to be somewhat bland. I made this today with 2 changes. It turned out very well except for it having too much corn. Should be close to great. It was very good. Served with sour cream and picante sauce. I made this today with the following changes: I did not have salsa, so I used pico de gallo instead and added some garlic salt.
It was good, but next time I will cut the tortillas into smaller pieces. Other than that, we enjoyed it, and I will make it again. My husband and 1 of my kids loved this! We doubled the recipe and made it in 2 pans so we could freeze one. I drained the salsa so it would not be too soupy.
My husband did not want me to make it and after dinner he said he loved it. This will be a regular meal at our house! This is tasty and simple to adjust and make it your own. I used less salsa to start and then added more little by little. I also added sliced ripe olives and cilantro. Will be making this again soon! I made this for my son's family. My daughter in law had surgery so I tried to help out by making a couple this to put in their freezer.

I made this dish last week, my family thought it was a little bland. The next time I make this, I will use hot salsa. That should kick things up a bit. I will add onions to it also. Very good taste using the ingredients I had on hand Made this healthier with minor changes.
It was very good and will make again. Not fussy-just on dietary restrictions for medical reasons. I made half the recipe - there's only me at 86, will have four meals from this delicious recipe. I added a whole can of seasoned black beans as one viewer kindly suggested. Oh my, what flavor - yum!! I tweaked based on my taste buds and available items. When timer went off on oven, topped with crumbled tortilla chips and sprayed cooking spray on top of those and placed back in the oven for about another 15minutes. I made this recipe last night. It was easy and quick! I put in some sliced black olives.

My family loved it and I had absolutely no leftover! We'll have it again! The flavor was great, but if I make it again I will cut back on the corn. Maybe to half a bag. Also, did anyone else have the problem of the tortillas being a little tough and soggy.
Didn't much care for the texture. I might try making it with corn tortillas. I live alone so I can't say if my family would have liked it. So silly of me to ask but do I steam the corn before mixing it in or do I mix it in frozen? Made this weekend and family loved it! Any hints on keeping the tortillas from getting too soft? I did drain them and the dish was not overly wet.
Will definitely make again! My family and I were really happy with this casserole. We will do it again! It was a little warm for my dad, a little mild for my husband but, just right for me. However, I have been put on a low sodium diet, so I haven;t made it in a while. Any suggestions on how to lower the sodium? Just look for low-sodium or no-salt products. They are usually right next to the "normal" products or in close vacinity. This was OK, not great. I thought it would hold together more than it did. I made one ingredient modification. I substituted a small can of sliced olives for the red bell pepper.
I made the whole recipe but I split the ingredients between two small square pans. One for now and one for the freezer. Have you cooked the one from the freezer yet? I'd like to make one to freeze but interested how it would come out once cooked. Wondering if anyone knows what the best way to get this into individual portions would be maybe after freezing? I like the idea of family style as well as teenage kid style: I think I'd separate the portions before freezing.
You could make these in small pie tins, cereal bowls, etc, freeze and then pop into bags to be pulled and backed in the tin or casserole. You could cut the tortillas smaller and use ramekins. Made this the way the recipe called for and then made another try with the black beans. I made this recipe, and it wad good, I added more torilla halfs to my dish because it was a little bigger, other than that it was very good.
The next time I will add maybe broccoli, corn, and maybe carrots. I love this dish and so did my kids.. I made this recipe on Sunday and it was a big hit! My husband, grandson and I all loved it! I have made something similar to this and it gets eaten up in mom time at my house. I'm the isle at the grocery store where the taco stuff is there is a box kit that is for taco bake. And I've always wondered if I could make it for cheaper and this recipe defiantly verifies that. With added better ideas thank you to everyone that added there ideas and own spin on the meal I will be making it he made from hear on out with one exception instead of shredded cheese I will be using cheese sauce like the salsa stuff.

I was just wondering if anyone had tried it with corn tortillas instead of flour. Corn tortillas work well, in fact stay a little firmer than flour ones. Just made this recipe. Came out really good. Will definitely make it again. This is my new pot-luck recipe. We all like new ways to use ground beef. This one scores a 10 in my book.
Very delicious and easy to calibrate quantities once you've tried it a few times. Recommend serving with topping condiments of sour cream and salsa. This was a great recipe, a wonderful meal. It could also be used as a dip. I made my own refried beans and salsa and layered the bottom with tortillas chips on top. I also had some homemade guacamole I had frozen that I put on top of the refried beans. Served with dollop of sour cream and salsa. Next time intend to use ground turkey with taco seasoning.

The casserole was pretty good. I made this for me and a friend of mine, it was delicious but neither one of us could finish the portions that I dished out. It's very thick, very filling. I love this recipe and make it often! This is the best casserole I've ever had! My picky teenagers are in the kitchen having thirds as I write this and thats not something they usually do. I didnt put the cold toppings on the whole casserole.

Second time around made Some changes for my family. I sauted onion,garlic with ground meat and taco season. Poured into baking dish. Reheated in microwave when ready for dinner. Reserved chips,cheese, green onions,sour cream to add separately.

I had some hard taco shells that I used for the crunch. Yes, we made this with one minor change, no peppers. It was really good. I cook for people and this lasted one meal with a little left over This is a delicious easily prepared dish. I did make one change. Rather than topping the entire amount with tomatoes, lettuce and broken tortilla chips I did that step on a per bowl basis and added a dollop of sour cream. That way you can more easily reheat the leftovers. Yes, I made the dish following the recipe. My family loved it. Also, I made it for Easter lunch and it was a big hit with everyone.
I tried this to bring to a Pot-Luck and it was almost gone but 1 serving, everyone seemed to like it, especially me, was easier to eat than a Taco. Farmer husband loved it--so much flavor. I did plate it by putting a bed of lettuce first and nestled the casserole on top. That way it will be good to re-heat. I made this recipe for my card group and it was a hit. I made this last night for dinner, and it was so good.. The only thing I did different was, I used one cup of salsa instead of the seasoning because I didn't have any, plus it's way to salty for our taste. I will be making this again and again.

I waited and put the lettuce and tomato after I served it. Added sour cream on top. I used a few more olives but the recipe is easy. Makes a pretty dish also. Super easy and my family couldn't stop saying how much they liked it. Definitely a recipe to keep around. I love this recipe! So good, and great for football season! It was a big hit especially with my husband. He went back for seconds. Leftovers were even better the next day. It was great for a weekday because it was so quick and easy. I did not have the green onions so I left this off. It was not essential, but plan to use next time.
My husband and I enjoyed it and the granddaughter enjoyed the leftovers.
